Old and new methods of concentrating musts and calculating yields as discussed. The best systems are use of apparatus of the Kestner type, without vacuum; vacuum evaporators with temp. under 100[degree]C; and concentration of musts by freezing. The freezing system is considered best. Temps. are lowered even under -10[degree]C while stirring slowly to avoid formation of large masses of ice.
