Wheat is one of the most abundant sources of energy and protein for the world population. A new basic protein was Isolated from wheat endosperm by Triton X-114 phase partitioning. This protein isolated from the wheat endosperm was named puroindoline. The puroindoline, endosperm-specific proteins involved in wheat seed hardness, are small proteins reported to have <i>in vitro</i> antimicrobial properties.
