Utilization of milk permeate for gellan gum production by Sphingomonas paucimobilis

The optimum fermentation conditions for the highest gellan gum yield by the strain Sphingomonas paucimobilis EMCC 2011 grown in milk permeate, peptone yeast glucose (PYG) and peptone yeast lactose (PYL) were studied. The highest gellan yield was achieved in milk permeate adjusted to pH 7.0, inoculated by 15%, incubated at 30degreeC for 60 days with agitation rate of 150 rpm. These conditions enhanced the fermentation parameters as gained sugar conversions coefficient of 0.43, gellan yield (11.2gl-1), biomass (4.3 gl-1), specific production (54.8 mg/g/hr) and lactose consumption (32 gl-1). The BOD5 of the milk permeate was reduced by 58%. These results reveal that milk permeate can successfully be used as a medium for gellan production by strain S. paucimobilis EMCC 2011, in addition to a clean environment.
