Current and future practices in hospital foodservice

, : Current and future practices in hospital foodservice. Journal of the American Dietetic Association 100(1): 76-80

A questionnaire was used to determine current and future practices in hospital food service. The probability that current practices will change was also investigated. A total of 214 questionnaires were returned by food-service directors in U.S. hospitals. The results showed that food-service directors are using a variety of strategies to respond to current environmental changes. They also showed that hospital food-service practices will change in the future, with increased emphasis being placed on running a hospital food-service department as a profit center rather than a cost center.
